Characteristics of Geyikli Region Olive Oil

The breathtaking geography of our olive groves in Çanakkale serves as a transition zone between the Mediterranean and Black Sea climates. Open to the North Aegean Sea, the region experiences winds of varying strength and direction throughout the year. The olives mature slowly and later in the season, influenced by the high oxygen and iodine content of the sea breeze. This slow ripening process enriches and intensifies the synthesis of aromatic compounds in the olives.

Our groves stretch along the hills overlooking Bozcaada, interspersed with pine, fig, and strawberry trees. In our view, the magic of the magnificent sunset here must surely contribute to the unique flavor of the olives.

Harvest and Olive Oil Quality

Doesn’t it break your heart to see olives harvested by beating the branches of the trees? Thankfully, more modern methods are now in use, utilizing specialized equipment for the job. We also use branch shakers for our harvest. This way, we protect not only our olives but also the buds that our trees are nurturing for the next season.

Why Cold Pressing?

Cold pressing is the process of extracting oil at a temperature below 27°C, which is crucial for preserving the beneficial compounds that make olive oil so healthy. While higher temperatures can be used to produce more oil, we prioritize quality and therefore adhere to the cold pressing method. ​
